Each Friday at Moby Dick Brewing Co. we get to drink beer the way Herman Melville would have. That’s when Brewmaster Scott Brunelle serves up a specialty cask-conditioned ale — in limited quantities.
Cask-conditioned brews are not stored cold in our 10-barrel serving tanks. Instead, they are stored in a small, old-fashioned cask (or Firkin). They are naturally carbonated when we add yeast. Then we serve them at “cellar” temperature, around 40-50 degrees Fahrenheit.
